Corn casserole

Corn Casserole

1 can whole kernel corn, drained
1 can creamed corn
2 eggs beaten
1 stick butter, melted
4 heaping T. all purpose flour
1/4 C. diced green pepper or red pepper or both
1 C. whole milk
1/2 C. shredded cheddar cheese
1/4 tsp each salt and pepper

Combine all ingredients and pour into a greased casserole dish.

Bake at 350 degrees for 1 hr. 20 min.

I thought I'd share this new to me recipe I found on Facebook, corn casserole.  I have never made corn casserole until now and I have to say it was pretty good.  Sugaring has been at a standstill with the warm temps, hopefully the temps will drop soon to reset the sap run.  So in the meantime Mr has been working in the barn making things in preparation for the chicks arrival.

I know most people want the warmer temps and I will admit I've enjoyed the warmer temps we have been having, but we need the temps in the 20's at night and 40's in the day for the sap to really run.

Our snow is almost gone now and you could say we are officially into mud season.  So, we are waiting patiently and hoping that we'll be boiling soon.
