Carrot banana bread

Carrot-Banana Bread

 1c. bananas, mashed
1c. sugar (I used splenda)
3/4 c. oil
2 eggs
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. carrots, grated
1/2 c. nuts (opt.)

Preheat oven to 350°.  Grease and flour 1 loaf pan.  In medium bowl, combine bananas, sugar, oil and eggs.  Beat 2 minutes.  Fold in flour, soda, salt and cinnamon.  Stir in carrots and nuts.  Spoon batter into loaf pan.  Bake 60-70 minutes.  Cool 10 minutes in pan before removing.

Remember the socks I started?  Well...I had to rip out what I already had done and start all over again.  They were going to be way too big.  I actually like this pattern much better.  I'm almost finished with this sock and have started it's mate too.  I just go back and forth working on each one.


Some of the pages from the memory book I made.  It's not "professional" but I'm happy with it for my first attempt at scrap booking.  The main thing is I had a lot of fun doing it.

We are getting company again this weekend but I don't think our kitchen table will look like this.  All but 3 of the Grand kids are in this picture...we pulled out the extra leaf last week when everyone was here.  They all seemed to enjoy the birthday party...But, who doesn't?
