a wonderful anniversary day it was
October 1, 2008
First off, I want to thank everyone for the Anniversary wishes. Looking back it really doesn't seem like 30 years have gone by.
I woke up yesterday to a bouquet of Roses.
I've been wanting to make these muffins so I made a batch for us. The only problem is the recipe does not make a lot, and you can't stop eating them they are so good. Next time I am going to double or triple the recipe.
Pumpkin Carrot Muffins
1/2 cup pumpkin
1/3 cup brown sugar
2 tbsp. oil
1/2 cup grated carrots
3/4 cup whole wheat flour
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. baking soda
1 tsp baking powder
Beat together pumpkin, brown sugar, oil and egg. Add in carrots. In a separate bowl, blend together flour, salt, soda, baking powder and cinnamon. Add to the pumpkin mixture. Pour muffins about 2/3 full. Bake at 375° for 10-14 minutes.

Then Jim took me to lunch at a cute little cafe.
We ended up eating outside. It was such a wonderful Autumn day. This place has the most delicious sandwiches.
Since this day is not all about me, Jim took the afternoon off and went golfing :). I spent the afternoon finishing up visiting the blogs I enjoy and then I worked on the knitting project I have going.
Then it was off to dinner at one of our favorite places. I think we have been here for our anniversary a few times. A lovely way to end a wonderful day.
Well, yesterday I did finish another knitting item for my shop, and then started on anther project for it. I will post about that later.
You all have a wonderful day today.
