To the 1st Annual Valentine's Day Boost-My-Blog Party,

Winter is still with us here in Southwest Wisconsin.
The maple syrup season is almost here and I can't wait to taste the first batch of syrup of the year. With the drought we had this past summer makes me wonder how much sap we'll be getting. We are planning to tap some of our neighbors trees, so that should help some. This photo is from last year, our first sap run came in February, notice there was no snow on the ground then.
We eat a lot of beans here in the winter months. We buy our beans in bulk and I add my own seasonings to the beans. I have to say this is one dish I have a hard time making, so this has fallen on my husband to make. We usually have beans for lunch with homemade wheat bread. He'll add leftover meat if we have any, carrots, celery, and some of our dried potatoes and onions. We have a couple jars left of those and I can't wait for gardening season to begin again so that we can stock up for next winter.
Eating beans must sound boring to you, but we like it, and it's very healthy for you, and it looks like we'll be needing to get more for next winter.
Since getting beef from our neighbor I never buy meat from the grocery store, well at least almost never, and now I won't have to ever. I decided to grind my own ground beef from the cuts of meat that I have a hard time making things with. Ground beef or hamburger is something I run out of first. I cut almost all the fat off and when I browned it up I couldn't believe that there was barely any grease.
On the menu for the week which was supposed to be Monday, I made Trisha Yearwood's, Gwen's Old Fashioned Potato Beef Casserole. See I told you I never follow my schedule. I can't find the recipe on the Food Network website, so if you want it just let me know and I'll e-mail it to you. Again it's DELICIOUS!

I'm trying to eat more beans this year too and think I might try growing some in the garden.

I don't eat meat, so I eat a TON of beans! I try to use different types so I don't get bored. Good luck with the maple syrup! We tapped our trees for the first time this year and got a little syrup. That 40:1 ratio killed us! haha.

It's a banana bread. I added maple syrup in place of the sugar and there is 2 tbsp of sour cream as I didn't have plain yogurt.

Judy your food looks delicious. And I enjoyed seeing the maple syrup buckets. I would love to find fresh maple syrup here.

I like beans, too, Judy....love green beans, navy beans, pintos, and great northern every now and then. So it does not sound boring to me at all.

Judy: You might take a look at OurBestBites minestrone soup recipe. I made it this week and LOVE it. I feel so healthy eating it. It doesn't have meat, just vegetables, pasta and beans.

I love ham and bean soup! But I am not a bean nut...so i just use a small amount of beans, some ham, and then lots of vegetables...more like a vegetable soup with ham and beans! : )
